The process of making live oil is long and meticulous. The first phase is the harvesting, the olives are picked every day and deposited in layers of no deeper than 10/12 cm. The olives must not be subjected to pressure as this could damage the quality of the oil (it could become acidic or have other organic problems which would make it inedible.)
