- ingredienti: chicken, green seedless Copar olives, onion,
carrots, chillis, white wine, Copar olive oil, tomato sauce.
Clean
and cut up a whole chicken, place in a pan with olive oil, carrots,
onion and chillies and simmer until golden. Add a glass of white
wine and cook on a low fire, when the wine evaporates add the tomato
sauce and continue to cook. When it is cooked add 200g of olives
and simmer for 10 minutes, take off the fire, place in a serving
dish and serve immediately.
LAMB WITH OLIVES
- ingredients: 600g of lamb cutlets, Copar olive oil, green
olives, origanum, salt, chilli and lemon.
Place oil in a large pot, place the lamb in flour and fry in the
oil. Add 100g of chopped green olives add origanum, salt and chilli.
Pour in the juice of half a lemon and simmer for a few minutes.
Serve hot.
